To make it really interesting and beautiful, I use One orange sweet potato, one Okinawan purple potato, a Yukon gold, and a White potato - they get a great mix of colors on the plate and each potato "fry" has a delicious, unique taste.&lt;br /&gt;&lt;br /&gt;You can also slice them really really thin and make colorful bag of "chips" to take for lunch!
